First year – keep watered and weeded. Harvest very lightly or wait until second year.
Second year – in fall cut down foliage and mulch with compost. Shoots will be produced in third year.
Sow directly outside in late spring, 1cm deep and 25 cm apart in the garden or in a large, deep pot filled with good soil/compost.
As Good King Henry is very hardy, ensure temperatures are mild enough to plant out - wait until after your last frost date to be on the safe side.Harvest during second year. Most of the plant can be eaten.
In spring (April – June) harvest shoots to cook like asparagus. Young leaves, and flowering stems can be eaten in salad or sauteed in butter. Later in the fall leaves may be cooked like spinach.
