Squash Sprouts

I’m looking forward to zucchini. I don’t think I’ve had any since last fall. Ever since I started growing my own and realized how long it takes for the zucchini to start to look like they do in the grocery store, I haven’t been able to bring myself to fork over money for a dry, damaged zucchini in the middle of winter. There should be lots of zucchini (with 15 summer squash plants!!!) and I will be able to make several batches of zucchini pickles for Christmas gifts. Which reminds me that I need to order the canner to work on the glass topped stove.

I also freeze some shredded for making zucchini cake in the winter.

Oh, does it actually work? I’ve tried shredding it in the past, then forgotten about it and wound up throwing it out during the summer once it’s totally freezer burned. The 1 cup baggies always seem to find their way to the bottom of the freezer!

I also want to try picking baby zucchini, cutting them stir-fry sized and freezing them. I think the bigger ones might be too watery, but it might work with the smaller ones (say mabye 4-6"?)

I love zucchini, too. It looks like you have quite a variety and with 15 plants you should have plenty to stock your freezer for the winter! You could put all your 1 cup baggies into plastic containers (like a tupperware or ziploc) with a lids or even a large plastic bags to keeping them from getting lost – that’s what I finally ended up doing and it’s so much easier to find what I need.

yes, it’s okay to freeze the shredded stuff. I thaw it first and then squeeze out the extra water. I freeze it in bags in 2 cup sizes so that it’s ready to just dump into the cake mix. I second the idea of putting all the little bags in one big bag. I did that this past winter with the shredded cabbage … works pretty good until someone searches through the freezer and the whole big bag ends up on the bottom too ! :)
