Other ideas for preserving Quinces?

After a few years with a disappointing harvest of quinces, my husband decided two plant to more shrubs.
And guess… this year I seem to have tons of them.

The recipes I most often use are for jelly, jam and quinces paste (the Portuguese ‘Membrillo’), but I’m wondering if someone has other ideas?

Hi.
In last year i did pickles form quince with red sweet pepper. Excelent taste – for me of course.
Are You still interesting in it?
I have more other recipes how to use quince in the kitchen – not only preserving.
