I have about another 10 – 15 lbs of green tomatoes. Anybody have any winner recipes for preserving or preparing them? I can only eat so many fried green tomatoes! I did put up 5 lbs as Green Tomato Relish.
I don’t know if you like jam, but where I live there are always a lot of unripe tomatoes at the end of the growing season, and green tomato jam is rather popular. I would have liked to prepare it this year, but all my tomato plants have died after a late blight attack.
Ingredients : 1 kg green tomatoes, deseeded and chopped, 600 g white sugar, 2 lemons. Method : put tomatoes, sugar, lemon juice and rind (only the thin yellow layer) in a bowl. Cover and let stand it in the fridge for a night. Put the mixture in a pan, bring to the boil and let it simmer, stirring occasionally, until thickened. When ready (I control the temperature with a jam thermometer), put it in sterilized jars, cover with lids and process for 15 minutes in water bath.

You’ve inspired me! I have a batch of very sugary green tomatoes in the fridge waiting for tomorrow to process. I was a bit dismayed at the amount of sugar it takes to make jams and jellies. I’ve never made any before so I don’t dare futz with the recipes. But I do wonder if there is a way to do it with less.
I’ve also found a recipe for Green Tomato Salsa Verde that I will be trying.
