Hot, or chili peppers, are categorized in the Longum group of peppers. In general, smaller chilis are hotter than larger chilis.


Peppers are best categorized by their rating on the Scoville Scale of heat. The Scoville scale (which is 10 point rating system based on the amount of capsaicin, the chemical that gives the heat) is the standard for describing hotness. Anything with a rating of 2-9 is considered a hot pepper.


For comparison, a pepper with a rating of 2 would be peppers such as the Anaheim or Pablano pepper, both have low heat. A Naga Jolokia, which is rated as the hottest pepper in the world, has a rating of 9.


A rating of 10 is impossible for peppers as that denotes pure capsaicin.
