Kohlrabi is grown for its swollen, globe-shaped stem and leaves. The stem can be peeled and eaten raw or cooked like broccoli; the leaves can be eaten like collards or kale. It is very hardy, and will last into the winter like kale. Harvest the stems when the knob gets about tennis-ball size. If left to get larger, they will get woody.
