I planted this sage for one reason only: Cooks Illustrated’s browned-butter-and-sage sauce. Here’s the recipe, as best I remember it.
+ Brown a few tablespoons of butter in a small saucepan.
+ Add a couple tablespoons of chopped shallots, and cook for a couple minutes.
+ Add a few tablespoons of chopped sage leaves, and cook until fragrant.
+ Prepare for rapture.
Mmm.
