I’ve noticed a couple of little aloe plants cropping up in the pot – what do I do with them? Can I dig them out and re-pot them? If so – should I wait until they are a certain size before I do that?

Pot-plants should be re-potted about once a year anyway to refresh the potting mix and make sure they’re not root-bound, so I’d leave them til you’re doing a re-pot then gently pull them off and give them new homes. At that size they should have their own roots but you have to divide them carefully to make sure the roots actually come with them.
The mad breeding of succulents is crazy- but really fun!
