I figured out photos. Now I need to go take more photos to fill in the blanks.
Going back through these, after discussing my spinach issue with RedLoon, and yes — it seems I knew about these critters long before they did much damage, but was too lazy to look up what kind of critter I had back then.
Looks very much like what she & the web both described as Leaf Miners, in the early stages, weeks ago. Lesson learned! Now I have the photograph proof to refer back to.
