I’m preparing for winter!
On our Dutch online marketplace I’ve bought glas storage containers to put up the bounty from our allotment for winter.
This year I want to learn all about canning.
I need to learn from scratch, as I have never done vegetables, only jam in re- used twist-off glasses.
Any tips or favourite recipes?

You need to have a pressure-cooker canner to do vegetables, except for regular tomatoes. You’ll be glad you went to the expense when you see all those lovely jars of vegetables for winter!

Forgot to say, there are lots of websites with canning recipes, just ‘google’ preserves or canning or preserving vegetables. If you can’t find what you’re looking for, let me know and I can email you some.

The Ball Blue Book is a must (although, is that a US-only publication?)!
There’s a preservation group here too, http://myfolia.com/groups/277-preserving-the-harvest
