Harvest Day: Eggs!

We’re supposed to get storms today (10-15mm) (5mm) and have had a few sprinkles but not enough yet. Hopefully we’ll get enough to get the soil thoroughly moistened. I need to till/dig and get the fall greens planted. I’m pretty sure I won’t be doing much picking in the garden (it’s too hot: 41 with the humidex, plus I don’t like to touch the plants when they’re wet) so it’s eggs to the rescue for harvest day.

Two days ago I found seven eggs, yesterday I found four, and this morning I found three. So I’m logging 12 eggs today to keep up with my tracking.

I found another shell-less egg this morning that had been stepped on but not entirely eaten. I removed it as best I could – I don’t want any egg-eaters in my flock. Later on this morning, I found the smallest egg yet: it looks as if it could be a quail egg! I’ll be curious to see if it has a yolk, or if it’s all white. It was on the floor with another medium sized egg. Along with the two on the floor there was a third in the nest box. The egg in the nest box was nearly “large” grocery store size: pretty impressive for not-quite 20 week old hens!

In the photo, the egg at the bottom left hand corner is the large egg from the nest box, the bottom right hand egg is the super small one, and the middle egg on the right is the medium egg from today. The other two eggs are leftover from yesterday.

I’ve been making lots of egg dishes: puffy German pancakes (which are a bit like Yorkshire pudding but less fatty), poached eggs, hard-boiled eggs (which is tricky with fresh eggs – they’re hard to peel), and yesterday I made tamago sushi. All very tasty with super-dark yolks! I’d like to sell some of the (eventual) surplus eggs, but for now I’m enjoying egg feasts. I still want to make quiche, eggs Benedict, mayonnaise, frittata, and many others!

    I adore Yorkshire pudding. Sometimes I make it with butter for a weekend breakfast. :)

The recipe my family makes with roast dinner is usually pretty rich/bordering on greasy so it’s usually a once or twice a year kind of dish. The puffy pancake seems to work quite well with comparatively little fat in the pan though, so I may have to explore serving Yorkshire pudding more often!

    @rosemarieGardener I made the best quiche ever a few days ago, I think the fresh eggs are maybe a bit sweeter tasting than store bought. They definitely have dark yolks!

    @flowerweaver this egg turn out to be yolkless. So far I haven’t found another, so I’m hoping that it was just a fluke. It was very pretty though!
