Healthy Eating: This time with Okra

Who said I can’t learn to eat healthy foods and enjoy them just as much?
For about 6 weeks, I’ve been trying to eat as healthy as possible. I do find it horribly unfair that I got so sick immediately upon starting this healthy eating. But, still.
I love that it’s brought food experimentation back into my life. What I thought was a lackluster feeling toward cooking turned out to be simply me being tired of the things I’ve made for the last 25 years.
For tonight’s installment of “Creativity in the Kitchen with Kim”:
In a bit of olive oil, I sauteed onions, garlic, jalapeno and sliced okra. When almost done, I added halved grape tomatoes and chickpeas. Salt, cumin and a mixed Mediteranian seasoning, then garnished with parmesan cheese and unsalted sunflower seeds. Probably too spicy for Christian (jalapenos), but very tasty.
The okra was fresh, although picked from someone else’s garden. (Yes, of course I had permission!)
