<body>You guys make me jealous! But I know that in a month or so I will be enjoying the same things!! For our 4th we had ribs, completely homemade baked beans, and cole slaw. The cabbage and carrots for the cole slaw came from our garden!! The first head! We also have a red cabbage, and another green one that will be ready in a couple of weeks, just in time for the baby shower. We wanted to to pulled pork and cole slaw for it.
I fully expect to have plenty of cucumber for pickling!!
That is an interesting idea, pickling zucchini!</body>

<body>Pickles are great and easy. I love refrigerator or fresh pickles, and you can do cukes, onions, green beans, and beets that way . . . in small batches--just what you might eat in a couple of weeks.

The other great thing about pickling is that you can preserve using a hot water bath--no need for pressure cookers or canners. I have been doing all the same things I do as fresh pickles plus jalapenos and other hot peppers (nacho slices). </body>

<body>We did a lot of different pickles. Okra, green tomato, tomato/pepper mix, garlic, jalepenos, cherry peppers, and a hot pepper mix, rather mild with banana peppers, anaheims, and something else, can't remember what.</body>
