    <body>I make a salad with this dressing:

1 part oil of your choice
2 parts sugar
2 parts cider vinegar
1 part water
salt and pepper to taste

Toss with onions, cucumbers and tomatoes. Adjust sugar and vinegar according to your taste. Very refreshing on a hot day.

@ 6differentways  ... I love tzatziki too and had a look at the recipe you posted ...  it's doesn't have dill?  Just curious, is that because you don't like dill? I've seen versions with mint instead, but I don't think I've ever seen a tzatziki without one or the other before :)

    <body>I used to make a summer meal with mint leaves, Belgian yogurt, cucumber (as much as you like), ham (I used bits of bacon but it would work equally as well with smoke/plain chicken I suppose) tossed over a fresh baby-leaf salad (any leaves). I'll see if I can find the original recipe, but that's pretty much it</body>

    <body>You can make pickles with them.  If you don't want to can, try refrigerator pickles!  They are great!  You can put a hot pepper in the mix, garlic cloves, etc.
I also make a cucumber salad, ceae.  It does not have tomato in it though.  Here is the recipe.  It is pretty simple:

1 cucumber (medium), peeled and seeded.
1 cp. sour cream
1 tsp. grated onion
1/2 teaspoon salt
pepper to taste

Simply mix together, chill and serve.  It is great!!

    <body>Cucumber is really good cooked, I used it once when I couldn't get zucchini. Just dice and cook gently in a little butter until soft, 5-10 minutes.
Also grated cucumber in yoghurt with chopped mint leaves is a traditional Middle East dish.</body>

    <body>The other night the SO surprised me by making a delicious topping for out wraps the other night. Very simple.

Grate as much cucumber as you like. Add either sour cream or plain Belgian yogurt, 1/2 tsp of crushed garlic (or 1 clove fresh garlic), black pepper and a squeeze of lemon juice. You can also add some chopped mint if you like. It was delicious with sweet &amp; sour chicken, chopped tomatoes, chilli, peppers and shredded lettuce. </body>

    <body>Korean cucumber salad w/ garlic, hot peppers, sesame oil, vinegar, sugar.

Spanish refrigerator pickles w/ onion, garlic, hot pepper, fennel seed, bay leaf, whole cloves. Cover with vinegar and water  (1 part vinegar, 2 parts water)

Cold cucumber soup. Lots of variations, but based on yogurt or buttermilk w/ pureed cucumber and garlic.</body>

    <body>Greek salad: Red tomatoes, quartered. Cucumbers, cubed. Feta cheese. Olive oil. Basil or other fresh herbs optional. Chill and serve with big chunks of fresh crusty bread. This is authentic -- I've been served this salad in Greek homes and on a picnics on an Aegean beach. 

I was also served fresh watermelon every day for a whole summer in Greece, as a high school exchange student. Every day. All summer. No one ever got tired of it, including me. An old man came through town once a week on a horse drawn wagon piled high with melons calling out his wares in Greek, and housewives came out to buy (or, in our case, sent their teenage daughters out to buy).</body>

    <body>@ ves- I bet that was a very educational, fun and exciting trip you took!!  The recipe sounds fabulous!!  I will have to give it a try!  I have all of the things to make it!!  Fresh tomatoes from the garden, fresh basil, Feta cheese...yum!!  I think that I will make that as a side dish for dinner tonight!!  It sounds like it would be a hit!
